Domaine Pelle Menetou-Salon Morogues 2018
Made from several parcels in the village of Morogues. Practicing organic, soils are plowed and completely hand-harvested. Aged in a combo of 70% tank and 30% wood (foudres and used 400L barrels) and for 11 months.
A classic style that is released ready to drink. Quite aromatic on the nose with a rich and powerful palate, quite full bodied for a Sauvignon Blanc and makes a great alternative to Sancerre.

100% Pinot Noir grown on Kimmeridgian marl and limestone. Aged in a combo of 70% wood *Foudres and used 400L barrels) and 30% tank for 12 months.
The terroir of the village of Morogues combined with strict vineyard practices results in a beautiful Pinot that would not be out of place in a tasting of Volnays.
Aydie Pacherenc du Vic Bihl (500mL)
A silvery yellow, this wine is perfectly brilliant and clear. Exotic fruits and honeyed notes on the nose, a combination of delicacy and strength. The lively attack on the palate is in complete balance with the rich, fat structure. The finish is a caress of citrus fruits and a long vanilla sweetness, typical of grapes dried on the vine. This sweet wine has enormous potential. To be drunk cold at 8° to 10°C and pairs perfectly with foie gras and cheeses.

Springfield Albariño 2022
Only the second Albariño to ever be made in South Africa's Cape. It's crafted sustainably with a 'hands off' approach and only in small quantities. But what little there is tastes fantastic. It's complex and rich, with flavours of apricot, nectarine and that vital saline minerality and bright acidity. Try this with white fish or oysters.
Springfield Whole Berry Cabernet Sauvignon 2019
Springfield adopts a minimal-intervention approach in making its Whole Berry Cabernet Sauvignon. The wine takes its name, 'Whole Berry' from its vinification – with grapes macerated whole, then fermented with natural yeasts, racked, and finally matured in French oak for one year. The wine has a velvety-smooth texture with soft tannins and typical Cabernet Sauvignon notes of red fruits and hints of cedar. A tremendous bottle of Cabernet for the price.
Springfield Methode Ancienne Chardonnay 2020
The Springfield Méthode Ancienne Chardonnay is special because it was made using ancient techniques rarely used in the New World: The fermentation takes place spontaneously with wild yeast in a combination of new and used French oak barrels. There is no fining or filtration. Thus, a wine of distinctive and classical character, it will develop slowly and is made to last a lifetime. Nuances of lime, cointreau and oranges – a big wine with classical character.
