Billaud-Simon 2016 Chablis Grand Cru Bougros
The nose is greeted by an enticing bouquet of delicate white flowers, intertwined with subtle notes of citrus blossom and a hint of honeysuckle. Beneath this floral veil lies a mineral core, evocative of wet stones after a summer rain, complemented by whispers of flint and sea breeze, a signature of the Chablis terroir.
Bougros is located on the right bank of the Serein River, in the north west corner of the Grand Cru slope, which flows through the Chablis region. It has a remarkable south east exposure and the steepest slope of all the Chablis Grand Crus.

It takes its name from the incredibly rocky soils in which it is grown. Intense, stony, minerally Sauvignon with lime, gooseberry, freshly cut green pepper and passionfruit notes. Zippy, zesty, mouthwatering, and utterly delicious. Complex and multi-layered, this is very much a food wine.
Springfield 2020 Methode Ancienne Chardonnay
The Springfield Méthode Ancienne Chardonnay is special because it was made using ancient techniques rarely used in the New World: The fermentation takes place spontaneously with wild yeast in a combination of new and used French oak barrels. There is no fining or filtration. Thus, a wine of distinctive and classical character, it will develop slowly and is made to last a lifetime. Nuances of lime, cointreau and oranges – a big wine with classical character.
