Paradigm 2017 Cabernet Sauvignon
The 2019 Cabernet Sauvignon is dark ruby in color with aromas of deep
ripe fruit, black cherries, blackberry, currants, plums, savory spice, vanilla,
and toasty French Oak. Aromas and flavours show nice concentration in
2019. The wine has a dense texture and mouthcoating mouthfeel. Classic
Oakville Cabernet flavors similar to the aromas. Optimum ripeness leads to
a lush, rich, and well-balanced wine that bodes well for age ability. Layered
and interesting with a long persistent finish. A delicious offering from
Paradigm.
Montelena 2018 Napa Cabernet Sauvignon
Fresh and dynamic, with cranberry, cola, and raspberry jam. The acidity is laser focused, the spine pulling the layers of flavor into harmony with the wine’s supple, yet dense, structure. The tannins here serve to elevate not overwhelm the kinetic balance of texture, ripeness, and vineyard character.
Billaud-Simon Chablis Grand Cru Bougros 2021
The nose is greeted by an enticing bouquet of delicate white flowers, intertwined with subtle notes of citrus blossom and a hint of honeysuckle. Beneath this floral veil lies a mineral core, evocative of wet stones after a summer rain, complemented by whispers of flint and sea breeze, a signature of the Chablis terroir.
Bougros is located on the right bank of the Serein River, in the north west corner of the Grand Cru slope, which flows through the Chablis region. It has a remarkable south east exposure and the steepest slope of all the Chablis Grand Crus.
